Tired of tossing your over-ripened bananas? I say, “No more.” This super easy and delicious banana bread recipe is here to save the day. You don’t have to be an expert baker to do this. All you need is a loaf pan and a few ingredients.

Ingredients
- 2 over-ripened bananas
- 1/2 cup of white granulated sugar
- 1/2 raw brown sugar
- 1 tablespoon of vanilla extract
- 2 large eggs
- 1 stick of butter, melted
- 2 cups of Gold Medal all-purpose flour
- 1 teaspoon of Arm & Hammer baking soda
- 1/2 cup of pecans (or walnuts) chopped
- cooking spray
Method
Preheat the oven to 350 degrees.
In a small bowl, mash the bananas with a fork until smooth. It should be the consistency of a puree.
Stir the eggs and vanilla extract into the mashed bananas.
In a mixing bowl, mix together (a.k.a. cream) the butter and sugar.
In another mixing bowl, combine the flour and baking soda. Add in the bananas and creamed butter and sugar. Stir until all of the ingredients are evenly distributed.
Add in the chopped pecans and stir the mixture so that the pecans are evenly distributed.
Lightly spray a non-stick loaf pan (approximately 9 in. x 5 in.) and fill it with the bread batter.
Bake for 1 hour, remove from the oven, allow to cool, then cut and serve.
