Ingredients
- 2 quarts of water
- 2 tablespoons of iodized salt
- 2 1/2lbs of Yukon Gold potatoes
- 1/2 cup of whole milk
- 3 tablespoons of Kerrygold butter (unsalted)
- 2 cloves of garlic
- 2 tablespoons of fresh parsley (chopped)
- 3 sprigs of fresh thyme
Method
Place the water and 1 tablespoon of salt into a large pot and bring it to a boil. While the water is coming to a boil, peel the potatoes and cut them into quarters.
Once the water is boiling, add in the potatoes, cover the pot, and allow the potatoes to cook for 15-20 minutes or until tender. While the potatoes are cooking, mince the garlic, rough chop the parsley, and remove the thyme leaves from the stem.
Drain the potatoes and place them into your Kitchenaid bowl or a large mixing bowl. Using your Kitchenaid or a hand mixer, whip the potatoes on a low speed for 2-3 minutes while slowly adding in the milk.
Add in the remaining salt, butter, garlic, parsley, and thyme. Whip for 2-3 more minutes, plate, serve, and enjoy.
