Who doesn’t love french fries? I mean really. And for those of us who really love french fries, there is a national holiday specifically created for french fry lovers near and wide. That’s right, July 13th is National French Fry Day. I could not imagine a better day for me to post this recipe. Let’s get to it.

Ingredients
- 3 large Russett potatoes
- 3 table spoons of extra virgin olive oil
- 1/2 cup of parmesan cheese
- salt, to taste
Method
Peel the potatoes, slice them as needed, and run them through a french fry cutter.

Place the french fries in a large bowl and fill the bowl with water. Allow the french fries to soak in the water for ten minutes.
While the french fries are soaking, preheat the oven to 400 degrees.
Remove the french fries from the water and pat them dry. Place the french fries onto a large non-stick baking sheet.
Bake the fries for 20-22 minutes or until golden brown. Be sure to turn the fries over after the first 12 minutes so that all sides of the fries get a nice golden color.
Once the fries have finished baking, place them into a large mixing bowl and toss them in the olive oil, salt, and Parmesan cheese.
Garnish with chervil or parsley and enjoy!
