Blueberry Explosion Oatmeal Muffins

Tired of your plain Jane oatmeal? Well this recipe will certainly give your oatmeal breakfast a little boost.

Servings: 6  ·  Yield: 12 muffins  ·  Prep time: 20 minutes  ·  Cook time: 30 minutes  ·  Ready in: 50 minutes  ·  Skill level: Novice

Ingredients

  • 6 packets of Quaker Oats Maple and Brown SugarInstant Oatmeal
  • 1 1/3 cup of skim milk
  • 2/3 cup of blueberries

Method

In a medium sized mixing bowl, empty the content of all four instant oatmeal packets.

Pour in the milk and stir the oatmeal so that everything is mixed evenly.

Place the oatmeal mixture in the refrigerator for 15 minutes.

While the oatmeal is in the refrigerator, take out your cupcake pan and line 12 cups with cupcake liners.

Preheat the oven to 350 degrees.

Take the oatmeal out of the refrigerator and distribute the oatmeal into the cupcake pan(s).

Top each cupcake with 5-6 blueberries (or just go crazy and add as many as you would like).

Place the oatmeal cupcakes into the oven for 30 minutes and set the oven timer.

After 30 minutes have passed, remove the cupcakes from the oven.

Set the cupcakes aside and allow them to cool before eating.
