Italian Sausage Tortellini

Raise your hand if your weeknights are as crazy as mine? Trust me. I get it. My ongoing weeknight mission is–get the Munchkin, check his homework, and get dinner on the table in time for me to watch Jeopardy and hang with the Hubs. If you are like me and time is short on weeknights, then this recipe is just for you. It’s fast, it’s filling, and it’s sure to please. Let’s get cooking.

Ingredients

  • 1lb of ground Italian sausage (mild or hot)
  • 4oz of tomato sauce (no salt added)
  • 1, 14.5oz can of fire-roasted tomatoes
  • 16oz of cheese tortellini (fresh, not frozen)
  • 5 quarts of water (for boiling)
  • 1 Tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of ground black pepper
  • 1 Tablespoon of ground garlic
  • Grated parmesan cheese (optional)
  • Fresh basil (optional)

Method

In a large skillet, brown the ground sausage. While the sausage is browning, in a large pot, bring 5 quarts of water along with the olive oil and salt to a boil.

Once the water is boiling, add in the tortellini and allow the tortellini to cook for about 7 minutes. Then, drain the tortellini and set it aside.

After the sausage has browned, stir in the tomato sauce and diced tomatoes, and allow to simmer for 3-4 minutes. Then, stir in the ground pepper and garlic powder.

Add the tortellini into the skillet with the sausage and toss until evenly coated. Serve the tortellini and top with grated Parmesan and strips of fresh basil. Enjoy!
