When I am looking to celebrate a special occasion, like an anniversary or promotion, I break out the prime rib and not just any prime rib. I want prime rib from Snake River Farms because I know that I will receive top quality American Wagyu beef, which is going to be tender and juicy and all of the things that a great prime rib should be.
During the holidays, I like to shake things up with my Caribbean-Spiced Prime Rib. It has a way of taking my holiday menu from ordinary to extraordinary. I think it’s because most guests simply aren’t expecting it. People are used to seeing the traditional holiday ham and baked turkey. But when you plate a nice piece of prime rib, people get excited.

Ingredients
- 1 11-13lb Snake River Farms Prime Rib Gold Grade
- 6 cloves of garlic
- 8 sprigs of thyme
- 6 springs of oregano
- 3/4 cup of corase Mediterranean sea salt
- 1/4 of freshly ground black pepper
- 5 tablespoons of Walkerswood jerk seasoning
Method
Preheat the oven to 350 degrees. Slice 4-5 horizontal slits, about 1-1 1/2 inches deep into the top of the prime rib and set it aside. Slice each garlic clove in half and insert two slices of garlic into each slit on the prime rib.
Then stuff each slit liberally with the thyme and oregano. Remove the rosemary from the sprigs and set the rosemary aside.
Massage the salt, black pepper, and jerk seasoning onto all sides of the prime rib. Be sure to turn the prime rib over so that you can season underneath as well. Then, top the prime rib with the rosemary, transfer it to a baking pan and place it in the oven.
The amount of time that you bake the prime rib will vary based upon the weight of the prime rib and your preferred temperature. For a medium temperature, 12-13 minutes per lb.
After the appropriate baking time has passed, remove the prime rib from the oven and allow it to rest for about 5-6 minutes. Then, slice, serve and enjoy.
